
Getting the Heat Right: A Better Way to Reheat
Ever notice how a standard convection oven just… kills the food? It happens because those ovens rely on hot air to do all the heavy lifting. By the time the center of your meal is actually hot, the outside has been blasted dry. It’s frustrating. We found a better way. We started putting infrared (IR) bulbs right into the convection circuit. Instead of just heating up the air and hoping for the best, IR sends energy waves straight into the food.
How the Magic Happens
Think of it as a tag-team effort. The IR bulbs handle the heavy lifting, pumping energy deep into the food quickly. Meanwhile, the fan keeps the air around it steady. This stops that annoying “crust-over” problem. You know the one—where you bite into something that looks perfectly browned on the outside, but the middle is still ice cold. With this setup, that doesn’t happen.
Picking the Right Gear
We use high-purity quartz glass for these lamps. Why? Because quartz can handle being turned on and off rapidly without cracking under the pressure. But here’s the trick: you have to get the wattage right for the size of your oven. If you go too powerful, you’ll scorch the surface. Too weak, and you’re right back to square one with a cold center. It’s all about the balance. As for the setup, it’s pretty simple. We use R7s or Sk15 connectors. They just slide right in, which means a tight fit and no worrying about electrical arcing at the terminals.
The Trade-offs
Nothing is perfect. These high-intensity bulbs put out a ton of heat. While that’s great for locking in moisture and speeding up the process, it puts a lot of stress on the oven’s frame. You’ve got to make sure your ventilation is actually doing its job. If you don’t pull that excess heat away from the control electronics, the ambient temperature will eventually eat through your wiring insulation. Keep it vented, and you’re golden.
